From this grape variety in the ASOTOM cellar is produced in purity:
SMENTIA ', Originally this wine was obtained by vinifying the grapes of six small ancient vineyards, some of which even reached 110 years, scattered among the hills of the municipalities of Ponzano and Castelletto Merli. Unfortunately the owners decided to eradicate them, which is why in 2006 I chose to plant a new Barbera vineyard in the lower part of the hill next to the cellar. In 2009 I obtained the first vinification of the Smentià from the grapes of this new vineyard, called by me "Naomi Campbell", the youngest of the company but with great potential.
Smentià in Piedmontese dialect means "forgotten". This wine expresses my idea of using modern cellar techniques to produce "grandfather's wine", that is, a type of wine that has become unusual, just forgotten. Grandpa's wine is a wine that needs no chemistry or sophistication.
This wine is vinified in steel and aged in barrels regenerated for at least 18 months, to allow the wine to reach the right maturation and natural clarification.
ASOTOM, Asotom is obtained from the exclusive vinification of the grapes of "Claudia [Schiffer]", a 70-year-old vineyard facing east. The vineyard, the longest lasting and best suited of the company, is located right next to the cellar and can be visited during the tasting. Mainly planted with Barbera, as per tradition it also contains about 5% of other native vines.
It is the most representative wine of the company, the most complex and multifaceted. It is vinified in large wood and aged in oak barrels for a period of time ranging from three to four years.
NESSUNO, Wine obtained from overripe Barbera grapes and produced only in exceptional years. The grapes are left to dry on the branch for as long as possible, until the bees come to attack the berries, and then they are moved to the barns of the cellar, where they continue drying in the shade and are selected weekly for grapes. The grapes are left to dry until Christmas.
Vinified and aged in oak barrels for a period of about two years.
The name "Nobody" indicates the absence of external influences - whether they are oenologists or agronomists - in the production of this as of the other wines of the company. This wine expresses my personal idea of passitoAdopt vines
